Back to the roots

First things first, I'm sorry but a lot of these posts may be delayed by a few days due to lack of wifi. I tend to write about the location I am levying on route to my next location, and if there I no wifi while I m there, then my posts become a little behind.

As for this post, be prepared for a long story... I'll try to condense it as much as possible for both your sake and mine. My thumbs may break if I write all the details, because too many memories were created in such a short time.
The reason for the title is because the last few days of our euro trip were broken up into based on our roots into two families (due famiglia). 3 of the people in our group of European travellers have roots that track back to Calabria, Italy (imcluding myself). However, because mio famiglia is coming to see my home town in November, we divided up 3 and 3 into 2 different home towns in Calabria. The division was basically mangicakes and manigcakes who are trying their hardest to be pure-breds. As a result my last few days were spent in the beautiful town of Angoli. In order to sum up this town in a few words, I have come up with the following:
1. Beautiful
2. Family
3. Food
4. Wine
5. Piccolo (only 300 people)
6. Experience
Angoli is basically a little town that sits ontop of a mountain and overlooks both the Tyrrhenian and Adriatic sea on either side. It is such a small town that all you can hear throughout the day is honking. The reason for this, is because when the locals recognize the car that is passing them, they honk as a way to say hello.... This happens to pretty much every car that you pass.
If you are ever going to have a meal with an Italian family for whatever reason, I suggest you prep your body for it and make your stomach as expandable as possible. Coming to Angoli after traveling Europe for a few weeks and eating only 2 small meals a day was the worst! The food was unlike anything I've ever tasted and I did not want to stop eating. My body kept freaking out because even though there was no space left in my stomach, I literally was not allowed to stop eating. If you ever try to resist the "manga manga manga" in an Italian household, be prepared to basically be force fed.
Now the reason I said this food was unlike anything I've ever tasted is because everything... And I mean everything, is either grown or produced in someway in this families backyard. From the vegetables all the way up to the sausages and capicola made from the pigs they raise. It was mind blowing and mouthwatering all at the same time.

Other than the amazing food and company, this trip was amazing because we finally got to relax. We made no plans, all plans were made for us and we were taken everywhere by car. This meant no grabbing 6 people and waiting for everyone to be ready, no trains to figure out and no drama!
We went to see so,me of the most beautiful beaches that were surrounded by the most clear water I have ever seen. For those visiting Calabria make sure you go to tropea and pizzo, and do not leave pizzo until you have tried their Tartufo! They are known for this and the portions are massive!

Spicy Meatballs

I had a package of ground chicken in my freezer and absolutely no food so as a result I had to work with what I had in order to make something delicious! I had originally made a few burgers with the ground chicken but then decided that since I have my Nonno's AMAZING spicy sauce, what better to do with ground beef than to make meatballs!

I have severely underestimated how spicy my Nonno's sauce is (by adding more chilli peppers). I think since I have been having the regular (unspicy sauce) most of the time, I forgot how much that man loved his spice and loved to test my pallet! As a result, the meatballs turned out awesome all because of that wonderful man and his Italian ways!
*side note: the pictures do not do justice, but the aroma definitely does

You can't have meatballs without a some parm and a little extra seasoning to top it all off

Christmas Party Baking!

I have invited a few of my close friends over for a Christmas Pot luck tomorrow evening. I am so excited to have everyone over all dressed up and finally having a lovely dinner together to celebrate Christmas. Of course for the pot luck I decided to make dessert! I whipped up some home made quinoa brownies as well as some vanilla cupcakes! Here are a few pictures of the baking process as well as the table I have set up for the night! Enjoy!
Of course I can't go through a whole night of baking without listening to Christmas music.
My mom was supposed to give me this in my stocking for christmas but gave in and gave it to me early! She clearly knows me too well! I love making cupcakes!
 Vanilla cupcakes from scratch
Quinoa brownies (as usually), I had to add some red food colouring to make it a little more festive though :)
My mom and I love baking!

Compilation

I'm sorry I have slacked in my posts lately. I have been swamped with my finals. I promise after the 12 there should be many posts since I will finally be able to whip out the old camera again! For now I shall post a few pictures from my phone that I've taken over the past few weeks that I've been MIA.

Homemade chicken noodle soup. I over cooked the noodles a little (they cooked super fast since they were egg noodles) but it still didn't taste all that bad :)
I have been going on a baking spree as my little stress reliever from my exams slash treat for my roommates. I really do pamper those girls ;) love em too much! This was all made from scratch. It is a vanilla cupcake with Nutella icing.
My parents came down over the weekend to take me out for breakfast, buy me some groceries and drop off a few things for the house. So lovely to go out with them and such a treat to have some flowers from my Mom to brighten up my room. I am obsessed with flowers but can never fathom spending the money on them every month when they die so fast :(
As we all know I have a slight obsession with online shopping. I just purchased these over the weekend from Aldo. They were so cheap I had to :s Originally $80 they were on sale for $30. They are perfect the christmas parties I'm going to over the break and am currently on a hunt for a cute dress to go with it ! If you have any ideas.. please let me know ;) Can't wait to wear these bad boys out
If you have yet to try this you must. Take 1 peppermint tea bag and 1 green tea bag and steep them for a minute or 2 (so they aren't too strong). It is the best combination of tea... so fresh and light!

Quinoa Brownies

These are absolutely amazing! If you are looking for a healthier and lighter choice rather than scarfing down a sweet brownie you have to try these. These brownies stay very moist and are the perfect choice when craving sweets.
Bring your water to a boil then turn heat down to low and allow quinoa to cook for 20 minutes.
Take all your dry and wet ingredients mixing them in a food processor until smooth. If you don't have a food processor a blender works fine (thats what I used)
Once your quinoa has been made allow it to cool before adding it to the blended mix.
For an added touch to the final product you can add anything on top. I added some melted chocolate. Icing sugar would work great as well.

Ingredients
1/2 C quinoa
3/4 C light brown sugar
1/2 C cocoa powder
1 tsp baking powder
1/4 C milk
2 tbsp canola oil
2 large eggs
1 tsp vanilla

Bake at 350 for 20 to 30 minutes
