Pierogi Pizza
Start by rolling out fresh pizza dough and using fat free sour cream as a base instead of tomato sauce
Take your baked potato and peel of the skin. Cut the potato into thin slices
Place potato slices on pizza dough, season with salt and pepper. Add chilli flakes for a little extra spice
Top with cheese, preferable mozzarella, however I used marble because that's all I had on hand. Add cooked bacon bits and green onion. For a little more spice you can add more chilli flakes at this point.
The final product! Add a large dollop of sour cream in the centre for dipping.
